Brighten up your Barbeques!
The sun came out to shine on our Platinum Jubilee Afternoon Tea Events on the bank holiday weekend and everyone left very satisfied with the delicious sandwiches, cakes and scones from Palm Court Café. Do remember if anyone is in a social group, we can arrange such an event for you; a little Harrogate history, a fantastic Afternoon Tea and brush up on your table etiquette!As the summer has arrived, sort of, we thought we would offer some great suggestions for alternatives to spruce up a barbeque
1.Instead of your usual burgers, go for pulled pork to adorn those buns. Slow roast the pork until tender and can be pulled apart. To get that great taste, we suggest either rubbing it with a mix of paprika, pepper, brown sugar and cumin OR cooking it in diet coke – it takes on a lovely sweet and sticky taste.
2.For those chicken lovers, marinate your chicken fillets in a mix of lemon juice, garlic, oregano and cinnamon for at least an hour before cooking on the bbq. Then serve with some flatbreads warmed on the grill too – a lovely Mediterranean flavour.
3.Be daring with that salad: throw in some colour and flavour. The best one I’ve had: Walnuts, oranges, goats cheese, almonds and raisins along with the usual lettuce and cherry tomatoes – what a thrilling array of flavours, there’s no reason salads should be dull.
4.A potato salad is always popular. You could add a few punchy slices of barbecued chorizo as the strong, smoky flavour of paprika from the sausage is balanced perfectly by the cool, creamy salad dressing. Alternatively, go for a sweet potato salad – mix the cooked potatoes with some feta and pine nuts.
5.You can’t beat a skewer but be bold. 4 tbspns light muscovado sugar with 60 ml cider vinegar over a low heat. If you have any fish sauce, add a tspn to the mix. Then put in pork chopped into chunks and cover with the mixture. Then put the chunks onto skewers, alternating with chunks of fresh pineapple – that will certainly brighten up those skewers.
6.What do you do for the vegetarians? Aubergines char beautifully on a grill and can be served with a sauce to complement the charred taste: a simple garlic and herb dressing can work well or you can make your own salsa verde using parsley, capers, hazel3nuts, red wine vinegar, olive oil and garlic – mix them all together with a blender or buy yourself a jar!
7.Garlic bread – a real crowd pleasure. Slice some ciabatta sticks lengthways and put them face down on a hot pan to crisp them up. Mix some butter with crushed garlic and parsley, turn the bread face up and spread the mixture over the bread. Grate some parmesan over the top and pop under the grill for a few minutes – then cut in diagonal finger slices and I guarantee their popularity!
8.If you are making your own burgers, make those cheese lovers happy by incorporating a molten cheesy middle. Mix together your burger mix of mince, garlic, thyme, egg yolk and breadcrumbs, form into balls and flatten then make a large indentation in the middle and put in a mixture of grated cheddar cheese and grated mozzarella. Close the meat over the top again and chill for at least 30 mins (or up to 48 hours) – 4/5 mins each side on the barbie – cheesetastic.
