One of the reasons I love my job
is that I get to meet so many interesting people and this newsletter is
inspired by one of those people, Donna, who visited us on the Harrogate Food
Tour recently. Her fascinating job as a food developer got us talking about
trends in foods and flavours and how they change. So this month’s newsletter comes from
research into current trends in the food world so I wanted to share them with
you so if you haven’t tried them, you can start right away!
1.BISCOFF
It is only 12 years ago that Salted Caramel became a widespread flavour and it appears that this years ‘salted caramel’ is Biscoff. The story of Lotus Biscoff started in 1932 in a local bakery in Lembeke in Belgium. The flavour of these delicate shortbread cookies with a whole lot of spice and a deep caramel flavour is now appearing in many forms including hot drinks, ice cream and cake. In fact, the biscoff cake has recently made its debut on our Harrogate Food Tour. We like to keep up with the times!
2.HOT HONEY
More and more people have experimented with spices and chilli sauces over the lockdown becoming more adventurous and ‘sweet heat’ are the words on everyone’s lips. Hot honey is a gentle mixture of honey and chilli peppers which brings the heat in the sweetest way possible and has become increasingly popular as a condiment. Perfect for so many uses, it can be drizzled over pepperoni pizza, added to a cocktail for a sweet kick, to accompany a cheese plate or glazed over chicken. Mmm.
3.KOMBUCHA
A sweet, fizzy, fermented tea. This has caught the imagination of those wanting better digestive health. Made of bacteria, yeast, sugar and tea, and becoming fizzy after fermentation, its slightly sour taste is not to everyone’s liking. However, people are becoming more educated about the benefits of good bacteria in the diet. Flavours such as lavender, turmeric and basil are also becoming popular as they are known to have many benefits for a person’s health and wellbeing.
4.CHERRY BLOSSOM
Japan is increasingly becoming an area of interest for holidays and for food. The cherry blossom flavour, or Sakura, is popular in the country and you can even find a ‘cherry blossom and sake’ flavoured kit kat! It is described as a ‘soft flavour of cherries’ and you can find it everywhere in Japan including a Starbucks coffee (NOoooooo) so if you get change, dofg try this sweet taste with the scent of flowers.
5.SOUR POWER
Another flavour trend from the east is the adding of salt to fruit drinks, which comes from the fact that salt can help neutralize bitter tastes so Japanese brands have launched drinks such as ‘salty grapefruit; and peach with salt!. These are considered ‘electrolyte beverages’ which contain water, electrolytes (e.g. salt and potassium) and sugar and their main purpose is to rehydrate. Another part of the trend for foods for increased health and wellbeing.
6.CHICK PEAS
Hardly something new but apparently, this year will be the year of the chickpea. As more and more people are looking for alternative sources of protein to meat, chickpeas have a lot to offer. Not only are they high in protein and make an excellent replacement for meat in vegetarian and vegan diets they offer a variety of health benefits for example improving digestion, aiding weight management and reducing the risk of several diseases as they are a rich source of vitamins, miners and fibre. Plus chick pea versions of rice and pasta are also emerging.
7.MOCKTAILS
As people become more aware of health, more people are deciding to decrease their intake of alcohol so there are many non-alcoholic new drinks on the market. Citrus fruit flavours remain popular but the range available is growing to include flavours such as pink grapefruit, yuzu, lime, mandarin, kumquat and a personal favourite of mine, hibiscus.
